Mischief Mixed Berry Pie

It's always fun to learn a new spell, isn't it? Unfortunately, those who are subjected to the mouth-watering aroma of Marion's Mixed Berry Pie won't be so lucky as to get a taste.

Prep time: 20 minutes

Bake time: 35-45 minutes

First seen in: Episode 18

2 Pie crusts

4 -5 cups mixed berries

1/3 cup cornstarch

1/3 cup granulated sugar

Pinch of salt

2 T unsalted butter, cubed

1 egg

Turbinado sugar

9 inch pie plate

  1. Pre-heat oven to 350°F.

  2. On floured work surface, roll out one pie crust to 11-12 inches in diameter and line a 9 inch pie plate. No need to trim off the excess crust just yet.

  3. Wash and cut berries (quarter strawberries and halve large blackberries) and put in large bowl.

  4. In separate bowl, whisk together the cornstarch sugar, and salt.

  5. Pour the dry ingredients into the berries and gently stir until evenly coated.

  6. On floured work surface, roll out second pie crust to 9-10 inches in diameter and use a knife or lattice cutter to cut even strips, all in the same direction. You want 8-10 strips total.

  7. Pour berries into prepared pie crust and gently spread until the top is even.

  8. Make the lattice topping: Take every other pie strip (to get an assortment of lengths) and lay 4 or 5 strips in one direction on top of the pie, ensuring they're evenly spaced across the pie.

  9. Starting in the center of the pie, fold the odd strips back over themselves, revealing half of the pie, place the longest remaining pie strip perpendicular. Unfold the odd strips over the perpendicular strip, and, working outward, fold the even strips back. Put the next longest remaining strip perpendicular. Repeat this process, alternating between even and odd until you've made a lattice over the pie.

  10. Carefully cut off any crust that hangs over the edges of your pie place and gently press a fork all around the crust to create a nice edge.

  11. Beat the egg until smooth and gently egg wash the lattice, trying to keep the egg off of the berries.

  12. Gently sprinkle turbinado sugar evenly across the lattice.

  13. Dot the butter cubes in varying holes in the lattice top.

  14. Bake for 35-45 minutes until the crust is golden brown and the berries have set up.

  15. Allow to cool for at least 10 minutes to allow the pie to set up (it will continue to set up as it cools).

  16. Enjoy with ice cream or whipped cream or by itself!
